How to cook Steamed Layer Cake (Kanom Chan)

Ingredients

  • 2 ½ cups of sugar
  • 4 cups of coconut milk
  • 2 ½ cups of Steamed Layer Cake Flour
  • ½ cup of pandan leaves water
  • ½ cup of jasmine flavour diluted in water
  • Rectangular tray or mold for streaming (10 x 10’ or 8 x 8’)

Instruction

  1. Add sugar and coconut milk into the pot. Mix well and put them on the medium heat for 5 minutes until sugar dissolves (but no need to wait until it boils). Then set the pot aside until cool
  2. Pre heat the tray or mold by putting them into the boiling steamer around 15 minutes.
  3. Mix the Steamed Layer Cake Flour with coconut milk and mix the mixtures together by your hands around 15 minutes until it is just incorporated. And then filter it with a sieve.
  4. Divide the mixtures into 2 cups, the first cup mix it well with the pandan leaves water and the second cup mix it well with jasmine flavour diluted in water.

To stream the cake

  1. Streaming the 1st layer by pouring white mixtures about 1/3 cup into the steamed tray and cover the lid for about 5 minutes.
  2. Open the lid and pour green mixtures on top of the white streamed mixtures and then cover the lid for about 5 minutes. Repeat the said steps until finish all of the mixtures. You may have the layer of the cake around 9-10 layers.
  3. The last layer should stream it around 7 minutes. And then set aside until cool around 3 hours.
  4. Bring the cake out of the tray. Cut the cake by dipping the knife into the hot water and gently cut the cake into pieces and ready to serve.
